Roasted Carrots

Roasting fresh carrots is a piece of cake, my friend!
Here’s a simple and delicious way to do it:
1. Preheat your oven to 400°F (200°C).
2. While it’s heating up, peel your carrots and cut them into your preferred size. You can slice them diagonally to get longer pieces or cut them into smaller chunks if you prefer.
3. Toss the carrots in a bowl with some olive oil, salt, and pepper. You could also add some herbs like rosemary or thyme. It’s your show, so you can flavor them however you like!
4. Spread the carrots out in a single layer on a baking sheet. If they’re too close together, they’ll steam instead of roast, so give them some space.
5. Roast the carrots in the oven for about 20-25 minutes, or until they’re tender and lightly caramelized.

You can give them a stir halfway through to ensure they roast evenly.

And voila! You’ve got yourself some delicious, roasted carrots.

Remember, we’re looking for that beautiful caramelization. It’s where all the sweet, roasted flavor comes from. So, go ahead, and get roasting! Trust me, your taste buds will thank you.

Food and Money, a real relationship

This is part of my health journey.

We started purchasing more farm to table foods and less packaged foods. We have the beef and pork, I was shopping for the milk, eggs, fish, fruits, and veggies.

I even got in more steps by walking the perimeter of the store. I smiled and said Hi to the other shoppers, it made it more fun.

Life is about having and sharing the light and peace from within you.

Learn the benefits of what is in your food. There is a reason labels exist.

Real food is a source of nutrition not a filler for the body to wonder what to do with that processed ingredient or the artificial flavor and dye.
